1. Introduction Campylobacter jejuni is one of the leading causes of gastroenteritis in humans [1]. It is a zoonotic commensal bacterium transmitted to humans [2] that colonizes poultry intestines, which contain low oxygen and a higher core temperature (40 to 42 °C). The presence of C. jejuni in poultry intestines leads to the contamination of poultry products during processing, which is the major route of transmission of C. jejuni to humans [2].
Divergent Reactivity of Hemoglobin Isoforms α2Aβ2 and α2Dβ2 from Meleagris gallopavo in Native and Fatty Acid-Modified States
Meleagris gallopavo (turkey) coexpresses distinct hemoglobin (Hb) isoforms, Hb α2Aβ2 (HbA) and α2Dβ2 (HbD), at a ratio of ∼3:1 (HbA:HbD). Herein, the reactivities of HbA and HbD were investigated in their native and free fatty acid (FFA)-modified states. Results indicated that HbD displays elevated autoxidation (kox) and an increased propensity to oxidize lipids in its reduced (oxy) and oxidized (met) forms. Interestingly, metHbD displayed less heme-globin cross-linking compared to HbA.

Animal fat includes subcutaneous, intermuscular, and intramuscular (marbling) adipose tissues (Rhee et al., 2000), containing mostly triglycerides (neutral lipids) and a small amount of phospholipids (polar lipids). In lean meat, phospholipids account for up to one-third of marbling. Fatty acids in meats are unbranched and have an even number of carbons from 4 to 24, although 12 to 24 is the most common (Voet et al., 2006).

Marketing Fed Cattle Based on Expectations of the Underlying Carcass Value Dynamics
Fed cattle profitability is determined by complicated dynamic processes of body growth, carcass development, and seasonal prices. A structural model is constructed to contend with all these dynamic processes to predict optimal market timing. Informed simulations are conducted and compared to those observed in the data, as well as to a previous model ignoring the evolution of carcass value. The results indicate that significant improvements to profitability are attainable with the new method.
