3.1. Optimization and Functionality of Mixtures Figure 2 a shows optical images of direct mixed pea proteins and C-phycocyanin samples (PC+PP) and co-refolded samples (PC–PP) at various ratios in a mixing pH of 10. Direct mixing samples showed minimal interaction between pea proteins and C-phycocyanin, as poorly hydrated pea proteins settled at the container bottom.
