Avocados Stuffed with Chicken Apple Salad!!! Mixed in a little bit of jalapeño for an extra kick. 2020 was a stressful year, but throughout it, I found solace in cooking and creating. This year, I’m going to hone in even more on recipes that are comforting for both my body and mind. This recipe is a great start! It was fun to make and tasted delicious — the process of coming up with foods like these is the ultimate stress reliever.
As a California girl, I did not grow up eating pimento cheese, but my boyfriend Grant is from the South, and this is one of his favorite foods! Classic pimento cheese is made with cream cheese and mayo and while that is DEFINITELY tasty, I wanted to make a slightly lighter version for those who might be a little more sensitive to dairy or heavy foods.
Pressure Cooker Green Chile Chicken Soup — Kale Me Maybe
This soup is perfect for when you’re craving an easy, classic chicken soup with a little flair, thanks to the green chile. This soup does resemble Pozole Verde, a traditional Mexican soup/stew, but it doesn’t have hominy or any peppers like poblano or jalapeño (or any tomatillos for that matter).
Jalapeño Soft Pretzels — Kale Me Maybe
I’ve been seeing these “2-ingredient” soft pretzels all over Instagram just using Greek yogurt and self-rising flour, and I wanted to make some of my own! My favorite soft pretzel to get at the mall was always a cheddar jalapeño, and I still love them to this day! I made these cheese-less, but you can always sprinkle on some cheddar before baking.
Citrus got real!! 🍊 I keep seeing everyone starting off their posts with puns, and I felt like joining in. I know, so bad. Made this citrus & avocado salad with a tamari honey dressing and topped with mint and dill! Ingredients Salad 2 large navel oranges 3 blood oranges 1/2 to 1 avocado Fresh mint & dill Tamari Honey Dressing 2 tbsp olive oil 1 tbsp tamari (or soy sauce) 1 tbsp rice vinegar 1/2 tsp honey 1. Peel oranges and cut into thin slices. Cut those slices in half to make half-moons.
Chocolate Chia Overnight Oats Parfait — Kale Me Maybe
I find making breakfast therapeutic, and I much prefer to wake up a little earlier and go a little slower in the morning so I can take the time to enjoy myself.
You too can live out your summer dreams with this platter of Grilled Lemon Zucchini with plant based feta and pine nuts!! I used a grill pan for this, so even if you don’t have a grill (or it’s too freakin cold to cook inside), you can make this in the comfort of your own home.
How beautiful is the color of these sweet potatoes?! I was surprised at how floral-y these potatoes tasted and smelled. Definitely a unique flavor and something I would love to experiment more with. I made my fave crispy smashed potatoes using these purple sweet ones I found, and I went the simple route by just finishing them off with some ghee, Parmesan, and green onion.
Ingredients (serves 2) 8 oz spaghetti or linguine (1/2 lb) 4 tbsp olive oil, divided. 2 large shallots, thinly sliced 2 cloves garlic, thinly sliced 2 cups whole cherry tomatoes 1/4 cup tomato paste 1/4 cup red wine 1/2 cup reserved pasta water 1-2 (4 oz) balls of burrata (can also use regular mozzarella here if you can’t get burrata) Fresh basil 1. Bring a large pot of water to a boil. While water is heating up, start preparing the sauce.
This Blood Orange Shrimp recipe is a riff on my Blood Orange Chicken recipe! You get that same sweet and sour flavor and sticky texture as the chicken dish, but this one uses shrimp! I added in a little bit of red pepper and onion for extra texture, and it was so tasty.
Right now, my favorite food at the moment is roasted red peppers. I’ve been eating them in bowls, in salads, and even just with a drizzle of olive oil. They’re so easy to make and they have so much flavor — so of course, I had to turn it into a pasta sauce. What I love about this pasta is that you can roast everything on one baking sheet, and then you just throw it into the blender, and then you’re pretty much done! Easy peasy.
Potato & Onion Galette with Goat Cheese — Kale Me Maybe
Last year, I attempted to make my first galette, and even though it was messy and overfilled, I was hooked! I had gotten a whole box of stone fruit from a local farm, and turning it into a galette was not only fun but tasty. I love that you can make them sweet or savory, and I’ve truly never made a bad combo. As someone who does not consider herself good at baking, I love that galettes have that rustic look, and even when you think you were messy, it always comes out so pretty.
Roasted Za'atar Potatoes with Lemon Feta Sauce — Kale Me Maybe
I am obsessed with potatoes, and I am obsessed with za’atar, so it was about time for me to make a potato za’atar recipe! They’re crispy on the outside, soft and tender on the inside, and seasoned to perfection. My favorite part though is the lemon feta dipping sauce. I like to take my fork and dip the potato into the feta sauce, kinda like you would a french fry.
Matzo Ball Soup - Kale Me Maybe
Chag Sameach! I know I’m a little late on coming out with this matzo ball soup recipe since the first night of Passover has come and gone, but better late than never! Also, I am a firm believer that matzo ball soup can (and should be) eaten year-round, and I want Jews and non-Jews alike to enjoy this dish. So, here we are, a few days late! I have many things to say about this soup, so bear with me.

Spicy Caramelized Onion Pasta — Kale Me Maybe
This delicious, spicy pasta gets its flavor from the caramelized onions! So good. It’s pretty spicy, so if you want to tone it down, use less crushed red pepper. If you really don’t like spicy, you can leave it out altogether or just use a pinch. To make this dish completely vegan, just use vegan butter! I already used oat milk in place of heavy cream, which actually worked really well in this recipe.

10 swimming workouts that burn fat quickly
Jump outs “Jump outs are a fun way to mix things up and add dry-land strength elements to your pool workout,” says Franklin. “The dynamic movement of getting out of the pool will provide added cardiovascular work and the exercise done on deck will strengthen joints and work new muscles.” Try doing sets where you alternate swimming 50 metres with getting out of the pool and doing a dry-land exercise.
Why You Should Never Leave Your Child’s Winter Coat On in the Car
Most parents and caretakers don’t think twice about bundling up their kids in warm, bulky coats on a cold day. But when it comes time to buckle that kiddo into a car seat, the safest thing they can do is remove the coat before strapping them in. Wearing a big, puffy coat underneath a car seat harness could prove deadly because while it may seem like a child is snug in their car seat, in reality, the coat causes the harness straps to be quite loose.

Why you should never leave your child’s winter coat on in the car
I’m a member of a lot of mothers groups and communities and the discussion around car seats is ALWAYS a heated one. People give their opinions on rear facing vs forward facing, side seat vs middle seat, chest clip height (FYI - Australia doesn’t use chest clips), straps, wearing jumpers… if there’s something to have an opinion on, it has been discussed before. But I wanted to share something my husband and I were discussing. See, together we have over 20 years of on road experience as Paramedics.
