I am sitting here, finger punching my laptop while sipping Lahat Adom 2024. That is the name in English, not a rouge or red in sight. The wine has a faint chill on it from 20 minutes in the fridge. It is mainly made with Syrah, a variety that seems so at home in the Eastern Mediterranean and the Levant. Just so it is not alone, it has a splash or two of Cabernet Sauvignon, which adds structure and a framework, but not too much.

Matchmaker, Matchmaker, make me a match! For the first part of my professional career, I was involved with restaurants and hotels in the world of wine education, sommeliers, and wine waiters. Matching wine to food was an intricate, fun, and pretentious sport. All wine professionals did it. Often, we had to match wines to every course of a banquet.

Cheese is part of numerous cultures, but in each one it has a different place. In the West, it is normally part of a meal, and there is usually a whole course devoted to it. As a Brit, I was brought up with the idea that cheese is eaten at the end of the meal, after the pudding or dessert. However, the French have a different custom. Their cheeses are served after the main course but before the desserts. Each gives a place of honor to cheese.
