1 Introduction Wheat germ is constituted by the embryo (seed) part of the wheat kernel and constitutes approximately 2%–3% of the total kernel weight, depending on the variety. The germ is particularly rich in vitamin E (tocopherols), various B vitamins, minerals (zinc, magnesium, iron, etc.), essential fatty acids, and biologically active compounds. In addition, the analysis revealed the predominance of fatty acids such as linoleic acid, palmitic acid, and oleic acid in germ oil.
