For his next trick, Isaac Rousso plans to get you to eat at a sit-down restaurant right in the heart of the fairgrounds at the Old Mill Inn. It is Dallas’s second-oldest restaurant, trailing only El Fenix for the title.

Let’s start by saying this: Tex-Mex and Cal-Mex are not the same food. The difference is a much heavier hand with cheese and cream sauces in the former, while the latter tends to be more vegetable-forward. At this point, the new Cal-Mex spots are so far from the home-cooking style that Tex-Mex embraces that it can seem like most of what they have in common is flour tortillas.

The first time I ordered Insomnia Cookies was well over a decade ago, around 2014, when one opened in my neighborhood. I was living in a converted bank in Manhattan’s Financial District. The area was underdeveloped with restaurants and bars, so the options on Seamless were limited. It felt like a novelty to only be able to order cookies from a place and have them delivered into the wee hours of the night. I placed an order (in the afternoon).
