Since Sippel opened La Cave two years ago, it has complemented—and contrasted with—L’Ostal. It is not a restaurant but a true European-style wine bar reminiscent of one you might find in Barcelona. Prepared foods such as cheese, charcuterie, tinned fish and tartines are served.

Chef Kelly presents a lunch favorite, Faroe Island salmon “a la plancha” with watercress sauce and grilled asparagus This smoked cocktail captures the ceremony on display at the tavern. Lobster pot pie with puff pastry in a sherry-laced sauce. The large dining room has an affluent equestrian theme, suited to casual lunches or white-tablecloth celebrations. Dashi is poured over chawanmushi topped with lobster, crab, shrimp and uni. Chef Peter X. Kelly has raised New Canaan’s culinary bar.
