How would you describe your cooking style in three words? Umami, smoke and depth. What's the one item you can always find in your store cupboard? Fonio. It's a super grain, and the oldest grain in the world. It's a cross between couscous and quinoa and I love it so much. Which chef has inspired you the most? She's not a chef, but my grandmother. She's inspired me a lot. What's your favourite thing to cook at home? When I have a lot of time, I love to make a Sunday roast for my family.

Three restaurants led by Pip Lacey and Calum Franklin will launch at the new Guinness Open Gate Brewery in Covent Garden, set to open on the 11 December 2025. Lacey, formerly of Hicce, will be heading up two of the new openings. Gilroy’s Loft, named after John Gilroy who created some of Guinness’ most iconic ad campaigns, will be a rooftop restaurant serving fish and seafood-focused menus, including line-caught fish and native oysters washed down with pints of Guinness.

I don't want to be really boring and say salt, but chefs always have salt in their cupboard. Otherwise, Tabasco! Which chef has inspired you the most? My dad. What's your favourite thing to cook at home? A Sunday roast. What's one piece of advice you'd give to chefs who are just starting out in their careers? Keep your head down and work really hard.
