LAMONI, Iowa — When Chad and Katie Hensley decided they wanted to farm, they knew they needed to find a niche. They could use a few acres Chad’s father owned, but they couldn’t afford a large tract of land or a lot of heavy machinery — so they decided to grow flowers. “I got interested in produce and cut flowers because you could get a return that first year,” Chad explains. And so began Big Creek Farms, a small farm operation on just a few acres outside of this South Central Iowa town.
