To slice a side of smoked salmon thin enough to read a newspaper through, you first make it cold. Not frozen. Cold to the edge of stiffness, the flesh brought down to somewhere between seven and fourteen degrees below zero, so the knife lifts a clean bevel off the top without the fillet folding or tearing under it. I have stood in enough smoking sheds, in Connemara and the Carolina Lowcountry both, to know the step is done by feel and never by clock.

The Holdfast

The knife has to be right. If you cut too close to the rock, you take the holdfast — the root, more or less, though a botanist would correct you — and the plant does not grow back. Ascophyllum nodosum, knotted wrack, can live for fifty years. It grows slowly, stubbornly, clinging to the intertidal stone in a place where almost nothing else persists. A good harvester leaves twenty-five centimetres attached. He comes back in three to five years.

Thirty Calves

Thirty Holstein Friesian bull calves, seventeen days old and forty-nine kilos apiece, were divided into two groups at Teagasc Grange in County Meath. Fifteen were fed to gain a kilo a day. Fifteen were fed to gain half that. Then somebody had to stay with them for twelve weeks and work out what the feeding had done, and that somebody was a half-forward from Hollymount. The paper appeared in the Journal of Animal Science in August of 2021, first author Stephen P. Coen.
