The paper laid the foundations for the carbohydrate boom that has ignited the peloton, credited with accelerating riders and their recovery. ‘We were one of the first groups to focus on the benefits of athletes consuming 120g of carbohydrate per hour,’ says Viribay. ‘During our work, I started to understand lactate and how consuming more carbohydrates promoted higher lactate availability in the body.
