Soil salinity modulates fatty acid composition and antioxidant capacity of rice bran oil

Soil salinity was strongly associated with variation in the compositional quality of RBO in both RD6 and KDML105 cultivated along the Siao Yai River. Multivariate analyses showed that salinity-related soil variables, particularly ECe, SAR, chloride, and exchangeable Na+ and K+, were closely associated with variation in fatty acid composition and antioxidant activity, indicating a major salinity-related gradient in RBO quality.
