Scrappy Chef: The Trilogy of Grilling
This is what summer is all about. Grilling or “cooking” out as some say, finally. We love grilling outside for many reasons. 1. The convection heat of the grill providing texture and tons of flavor to meat, vegetables, fruits, and fish and found to benefit our health, of some sorts, especially when the fat renders and drips away, that makes it healthful.
Scrappy Chef: Hot-Diggety-Dog!
When it comes to a BBQ event, you just have to include the almighty American summer favorite grill food, “Hot Dogs”. Whether on a stick, on a campfire, cookout in the park or in the backyard, on the gas grill, fry pan, whatever cooking form, a hot dog is a treat. Doesn’t summer start any celebration? These are a symbol of summer. We love them, in fact 80% of Americans think hot dogs taste great. It’s a crazy staple that we count on, and the song is pretty catchy.

Scrappy Chef: Blah, blah, blah
I know by now we’ve had enough of what we put up and prevailed with this past year… But, (Isn’t there always a but?) We grieved, rejoiced, reshaped worried, became compassionate, donated, aided across windows and doorways, became lonely, became depressed because of our isolation in our little bubble.
Scrappy Chef: Science 101
Tomatoes…fruit or vegetable? Almost like the chicken question isn’t it? Which came first? The chicken or the egg? That depends, in comparison, is an egg part of a chicken? It feels like a vegetable, taste like one, it’s used as a base for many culinary wonders, it requires no explanation, is low in sugar, vitamin profile is desirable, it’s sliced for sandwiches, quartered for salads and what nots, it is pureed, simmered with garlic, herbs and mirepoix.
Scrappy Chef: Traditional and Not so Traditional Cobbler
I put titles for this article into the computer, and my previous articles published popped up. My mind was wondering, is it possible to have covered, too many themes, content, thoughts? Nahh, no way! There is still so much to learn. I went way back and re-read the columns.
A Note from the Scrappy Chef
The Rangeley Highlander Posted 12:09 PM Updated 47 mins ago increase font size Scrappy Chef Fans, My thoughts are with you, I have not abandoned you!…Because I fell on ice, I broke several vertebrae in my back which totally immobilized me…I was checked into “Le 4 Season L’hospital”, in Farmington for a glorious 8 day spa stay and then went to “Le L’hospital Sheraton” in Lewiston for surgery for a glorious medical vacation I did not anticipate or want.
Shamrocks, Saints and Shillelaghs
So soon after Valentine’s Day, we take down our red decor and opt for the green. Being the only holiday, since the turn of the 10th century, that was once known in Ireland as “The Feast Day” of St. Patrick’s, takes place during the Catholic season of Lent, where on 3/17, it became an official feast day for the Catholic church since the beginning of the 17th century.
Scrappy Chef: From Scrappy’s Appliance Graveyard -The Dutch Oven
•Is it devotion? Well, not just kitchen eye-candy, Dutch ovens are the key to hearty one-pot cooking. Although it is easy to define the modern cooking marvel, it’s path in history was much harder to pursue, as this pot, that goes by the “Dutch Oven” isn’t actually dutch. They can be found all over the world, sizes and shapes and adapt to a variety of cuisines, uses and conditions.
More comforting food
Now that the snow is coming down, it’s more like winter! We tend to make more comfort meals.
Scrappy Chef: Comfort food is anything you just sigh… yum, yum, yum
Over the past couple of decades, cooks all around have racked up phenomenally good comfort food, from the creamiest macaroni and cheese, the fluffiest pancakes, and Mama’s best pot pie recipe. We all love making these recipes, and they have become family favorites, and most certainly will be passed down generations as what home-cooking is all about. Comfort food is a kind of food that provides a nostalgic or sentimental value to someone, whether specific to them or applies to a specific culture.
‘Splaining The Plant Base
The sign said “The Impossible Burger”, and Burger King, putting the original whopper next to a look-a-like whopper pretending to be a “real” whopper actually made of plants, and even giving it a name…”The impossible burger”~. They have been advertising the heck out of it, grown construction type of men being offered a burger made of plants, coercing them into thinking it really taste like beef. Does it? Does it not?………… So what is it? Plant-based meat is meat made from plants.
Scrappy Chef: S.I.T- Sommelier In Training
In a year of incredible unrest and uncertainty, one things that remains true, food still brings people together. Don’t risk, people, getting or being infected and passing that on to family members, just because you just had to be together. Especially those of you who work on the front lines, school systems and other public arenas. You have made it this far, work on continuing to the end of this.
From the Appliance Graveyard….The Bread Machine
Bread, in all its various forms, is the most consumed food in the world, it’s portable and compact which has explained its place in our diets for thousands of years, where it was suggested that humans started baking bread at least 30,000 years ago. So how did we get from stone cooked flat bread to a fluffy grocery store loaf?
Scrappy Chef-Holiday at L’hopital Sheraton
The Rangeley Highlander increase font size Friends and followers I had a stay-cation” again at my doctors favorite resort, L-hopital Sheraton. It was crowded, I imagine it must be a great time of the year. The view was fantastic, trees, roads, sidewalks and buildings frozen with glistening ice from a storm that fell on the state of Maine and also didn’t put me at the beach or lakeside. The storm made driving to get there a real challenge, turning a 2 hour trip into 4 hours.
Scrappy Chef: The Incredible Egg…
Looking in the fridge, I saw on the left side, eggs and it made me think about the advertising slogan, “The Incredible Egg”, which after I pulled the carton out, was clearly printed on the cover. Being a foodie and word buff, I often think of advertising slogans and often catch myself singing the jingles. You have to admit it there is quite a few that are permeated in your mind.
Scrappy Chef: Muffin Man, Muffin Man, an Appliance Graveyard Rescue
The following is the entire submission that was mistakenly cut off and broken apart due to an unfortunate series of events during production of the last May 17th issue. I feel like it is similar to a power outage in the middle of baking muffins. It couldn’t be avoided and I couldn’t save the “muffins” in time to go to print. My sincere apologies to the Scrappy Chef Joanne Blais and to her loyal readers.
Muffin Man, Muffin Man
I had been walking around the house aimlessly. Finally, I told MaMa, “I have writer’s block”. “Can’t think of anything I want to write about, it’s spring then it’s not spring, it’s winter, then it’s not winter.” “It’s sunny then it’s not sunny, it rains, and then we freeze.” “I can’t tie a story to whatever.” She laughs, and casually adds, “That’s funny, you usually can’t keep your mouth shut”.

“What can you do with all that leftover ham? People can save that?” Chet Massey Last week, Mama and I rolled out of the house having been couped up sick and not feeling well, for the past 3 to 3 ½ weeks, to venture to Farmington, the little town pretending to be a big town, after all it was Easter weekend, and the kids were coming over for dinner. “I have to get groceries”, she says. In total agreement, an opportunity to get out to smell the air, as we have not been out lately.

The Senior Social recently ended its winter program. Like shopping for “that” shoe that makes finding a pair that fits comfortably, (as Uncle Judd would say… a “Heehaw” moment), the positive impact on social life making friends sharing your zest for mild {and I say that mildly} competition, makes this a favorite kind of gathering for the winter. Here I thought it was a soup party.
The Scrappy Chef: What’s for Easter?
Food should not be complicated or bad or expensive. If you’re needing budget friendly, healthy inspiration as we spring into summer, think… you can make that work. I tend to find single ingredients inspirational and make these super easy and delicious to boot. To save money on sides this year, I’m looking to my pantry without breaking the bank. For a starter, a Spinach Ambrosia Salad, ambrosia meaning “immortality”, food of the Gods. Mix a cup of mini marshmallows, 1/2 cup of shredded coconut, 1 sm.
Wintering
When I tell you it snows here, don’t read between the lines…..When it starts it doesn’t stop…6-8, 10-14 inches, snow blowing sideways, downway, in circles swirling, 6 foot snowbanks, plow trucks, sidewalk plows, everyday or like lately every other day.
Chef Scrappy: Les Gateaux
It’s a hobby, and I don’t know if you have noticed that I have a simple curiosity and passion for *History of Food*. I love, love, love to cook and I love to read, watch the news. I like word games, gardening, wine and music. {Oh wow, this…sounds like a dating profile, LoL. ~ Boy ‘o boy, didn’t I think that out loud pretty confidently! }, So, getting back to what I enjoy about the food history “stuff”.
Chef Scrappy: Red Velvet Chocolate Chip Cookies
My move to Maine was exceptionally different for me. My work wondrously brought me across this country, LA to Boston, North and South, and everything in between them, and as home base, the State of Texas in Dallas-Fort Worth, as well to which was totally enlightening, exhilarating and fulfilling to me. With NO limits for adventures and experience in the past 40 years.
