Lentil Curry
When you buy through our links, we may earn a commission. Learn More This hearty lentil curry recipe is perfect on a cool day. Featuring tender lentils and plentiful veggies, it’s nicely spiced with curry powder and cumin. Curious about the spice level? I’d classify it as mild. The dish is lightly creamy thanks to some coconut milk, but not heavy. Make this curry when you want to warm up and eat your vegetables as the same time.
When you buy through our links, we may earn a commission. Learn More Let’s get cozy with cornbread and chili! I’m so excited about how this cornbread recipe turned out. It’ll be my go-to from here on out. It has the same irresistibly crisp edges and subtle brown butter flavor that I love in my honey butter cornbread recipe, but magically tastes even more like corn. This wholesome cornbread is gluten-free because it uses almond flour instead of regular flour.
Chipotle Sauce
When you buy through our links, we may earn a commission. Learn More This creamy chipotle sauce is bold and punchy! It’s the kind of sauce that takes your meal to the next level, and brings together component-based dishes like tacos and burrito bowls. You can also serve it as an irresistible dipping sauce. It offers a thicker drizzle than chipotle mayonnaise and tastes better, too. To make this chipotle sauce recipe, you’ll need a few basic ingredients.
Stuffed Poblano Peppers
When you buy through our links, we may earn a commission. Learn More These stuffed poblano peppers are boldly flavored and legitimately hearty, boasting 20 grams of protein per pepper. They’re stuffed with soft, blended black beans followed by two kinds of cheese. The cheese turns gloriously golden in the oven while the chili peppers become nicely tender and caramelized. Two layers of red salsa, one underneath and one drizzled on top, bring this crowd-pleasing vegetarian main dish together.
Hemp Milk
When you buy through our links, we may earn a commission. Learn More Let’s talk about hemp milk. It’s easy to make at home (no soaking required), and yields a silky-smooth, creamy milk. Hemp milk boasts the most impressive nutrition profile of my alternative milk recipes, offering nearly 10 grams of plant-based protein per serving. While hemp milk can’t compete on the calcium front, it offers an array of nutrients that can be hard to come by otherwise.
Almond Flour Blueberry Muffins (Gluten-Free)
When you buy through our links, we may earn a commission. Learn More You won’t believe that these blueberry muffins are gluten-free, but they are! The recipe has much in common with my Healthy Blueberry Muffins, but it uses almond flour instead of regular flour. No xanthan gum, no starches, just simple ingredients built around one gluten-free flour. Transitioning a recipe from conventional wheat-based flour to almond flour is never straightforward.
Cilantro Lime Sauce
When you buy through our links, we may earn a commission. Learn More Have you tried Chipotle’s new cilantro lime sauce? I’m a big fan. It’s creamy, super fresh and somewhat spicy. I’ve started ordering cilantro lime sauce in lieu of plain sour cream on my standard burrito bowl order, and it really takes my bowl to the next level. I reverse-engineered this recipe from Chipotle’s ingredient list. It’s made with cilantro, lime, Mexican spices (I only add cumin), sour cream and roasted jalapeños.
Panisses (Chickpea Fries)
When you buy through our links, we may earn a commission. Learn More Chickpea fries? Yes! Panisses are an irresistible snack famously served in the Provence region of France. Similar to regular fries, they’re crisp and golden on the outside, but with pillowy-soft interiors that remind me of creamy polenta. Nutritionally, they’re superior to regular fries, offering a hearty source of protein, fiber and monounsaturated fat. Like French fries, they need to be sufficiently salted to be seriously amazing.
Grain-Free Granola
When you buy through our links, we may earn a commission. Learn More I love granola, and this grain-free granola is no exception. Most granola recipes are oat-based, but this one is oat-free. Regardless, it offers a sweet, nutty crunch that’s reminiscent of my most popular granola recipe. Like any good granola, it’s irresistible. When I first heard of grain-free granola, I was perplexed by the concept. I’m a big fan of oats and whole grains, of course, and I still am.
Blueberry Cobbler with Almond Topping
When you buy through our links, we may earn a commission. Learn More This blueberry cobbler is a summertime delight! It features jammy ripe blueberries beneath an almond flour-based biscuit topping that’s tender on the inside and perfectly crisp and craggy along the edges. I hope this recipe will become one of your go-to summertime treats. It’s certainly a winner in my repertoire. This recipe is the cobbler version of my popular blueberry crisp.
Creamy Basil Sauce
When you buy through our links, we may earn a commission. Learn More You’re going to fall in love with this creamy basil sauce! It’s like a super fresh, summertime aioli that brings sandwiches and snacks to life. You can whip this sauce together in just a few minutes with a few ingredients. I make it all the time, and keep finding more uses for it, so I’m highlighting it here today. It’s not too late to plant some basil this summer.
Peach and Burrata Salad
When you buy through our links, we may earn a commission. Learn More This summertime stunner tastes as good as it looks! I had a feeling my Burrata with Tomatoes and Basil would be good with peaches instead of tomatoes, and wow, it’s great. I wholeheartedly recommend it. The recipe features sliced peaches, fresh arugula and basil, creamy burrata, and toasted pistachios, drizzled with olive oil and balsamic vinegar.
Best Ever Zucchini
When you buy through our links, we may earn a commission. Learn More Meet the ultimate zucchini side dish. It features caramelized zucchini and red onion with toasted sliced almonds, seasoned with fresh garlic and a squeeze of lemon juice. The flavors are bold, the dish is vibrant, and I’m going to make this sautéed zucchini all summer long. I don’t always like cooked zucchini, but I love this recipe. Zucchini can be squeaky or mushy, and I often avoid it on restaurant menus for those reasons.
Chocolate Chia Pudding
When you buy through our links, we may earn a commission. Learn More You’re going to love this chocolate chia seed pudding. Seriously, though! I’m always suspicious of chocolate “desserts” made with sneaky healthy ingredients like avocado or sweet potato. I can taste them, so they don’t taste like a real dessert. This chia pudding, however, is a wholesome treat that I truly enjoy.
Almond Flour Scones (Gluten Free)
When you buy through our links, we may earn a commission. Learn More These scones are made with almond flour, and frankly, maybe all scones should be—whether you need them to be gluten-free or not. They’re 100 percent delicious, featuring perfectly tender insides and golden exteriors that offer a light crunch along the edges. Jammy burst blueberries, lemon zest and a light sprinkle of raw sugar take them to the next level! I didn’t come up with this idea myself.
Vegetable Stir Fry
When you buy through our links, we may earn a commission. Learn More This vegetable stir fry tastes as good as it looks! It features perfectly fork-tender, seared vegetables in a glossy sauce that leans more savory than sweet. I love the vibrant combination of broccoli, bell pepper, carrot and red onion shown here, but you can change up the vegetables with the seasons. Serve it as a simple side dish, or turn it into a full meal by adding rice and protein, like the crispy baked tofu shown here.
Pizza Beans
When you buy through our links, we may earn a commission. Learn More What are pizza beans? They’re hearty white beans that taste like pizza, of course, simmered in a marinara-like sauce and topped with bubbling mozzarella cheese. Deb came up with the concept, and I’m a huge fan. Today, I’m sharing my spin with canned beans, optional spinach, and a rich tomato paste-based sauce that tastes like it’s been simmering on the stove for hours.
Socca
When you buy through our links, we may earn a commission. Learn More Are you familiar with socca? If not, please let me introduce you! It’s basically a rich, savory and salted chickpea flour pancake cooked in piping hot olive oil. The edges are crispy and chewy, the insides are flaky and tender, and the bottom is lacy and golden. It is just so good. You’ll have to try it. Socca is a street food popular in Nice, France, with origins dating back centuries (it’s closely related to Italian farinata).
Palak Paneer
When you buy through our links, we may earn a commission. Learn More Palak paneer is my favorite dish to order at Indian restaurants, and I’m excited to offer my homemade version to you! Palak paneer features tender cubes of paneer cheese in a well-seasoned, silky, spinach gravy. Palak literally means spinach, and this vibrant green dish is fully loaded. It’s vegetarian comfort food at its finest. Palak paneer hails from the Punjab region in Northern India.
Chocolate Easter Egg Nests
When you buy through our links, we may earn a commission. Learn More How fun are these Easter bird’s nests? This recipe uses sliced almonds and roasted pistachios instead of chow mein noodles, so these candies are a more wholesome treat than many other options. They taste similar to Bark Thins, if you’ve tried their nutty options. Add a sprinkle of crushed green pistachio and flaky salt for extra flavor and a more realistic nest look! These gourmet nests are easy to make.
45 Vegetable Side Dishes
When you buy through our links, we may earn a commission. Learn More Brighten up your table with these delicious veggie side dishes! Whether you’re searching for the perfect holiday side dish or a fun recipe to inspire your family to eat more vegetables, you’ll find a great option here. We all know it’s true—the more vegetables, the better! To create this collection, I looked through my side dish recipes and pulled 45 of the most flavorful and popular vegetable-based options.
How to Make Bread Crumbs
When you buy through our links, we may earn a commission. Learn More These tiny homemade bread crumbs can make a big impact on your meal! They’re the perfect crisp finishing touch on casseroles, salads and more. Follow this recipe to make regular golden bread crumbs, or add the optional seasonings and your kitchen will smell like the best Italian restaurant. This simple recipe is far more flavorful than store-bought options, and keeps well for months.
Blue Cheese Dressing
When you buy through our links, we may earn a commission. Learn More I don’t always love blue cheese, but I love this blue cheese dressing. It’s a great introduction to blue cheese if you’ve been hesitant to try it, and a guaranteed winner if you love it. You can use mild cheese, as I prefer, or a more intense blue cheese for a bolder dressing.
Egg Bites
If you’ve enjoyed the egg bites at Starbucks, here’s how to make them at home! These egg bites have become a staple recipe in my kitchen. Sure, they’re not the prettiest egg recipe, but they’re wonderfully flavorful and silky tender. They’re a protein-rich snack or ready-made breakfast to keep in your refrigerator (they freeze and defrost well, too). These egg bites are a fun cooking project with a few twists along the way. I was surprised to find cottage cheese in Starbucks’ ingredient list.
Gluten-Free Chocolate Chip Cookies
It took me ten tries to get this cookie recipe just right, but it was worth the effort! These gluten-free chocolate chip cookies are made with just one wholesome flour—almond flour. They’re also sweetened with maple syrup instead of brown sugar, although you likely wouldn’t guess it. I love to use natural sweeteners when I can. These cookies are golden and lightly crisp around the edges, and tender and chewy in the middle, which is exactly how I want my chocolate chip cookies to be.
Fajita Veggies (Chipotle-Inspired)
These sizzling fajita vegetables will liven up your dinner table. The recipe features colorful bell peppers and red onion, seasoned and cooked to golden perfection. It was inspired by Tex-Mex fajitas and the veggies I always request on my Chipotle burrito bowls. It took me quite a few tries to nail the texture that I had in mind—I wanted my peppers and onions caramelized on the edges, cooked until mostly tender, yet far from mushy.
Energy Balls Original
These energy balls are lifesavers! When you’re hungry in between meals, running out the door without breakfast, or craving a wholesome little treat, these energy balls will come to the rescue. They’re the perfect healthy grab-and-go snack. This recipe is made with oats, honey, nut butter, and toasted nuts and seeds, though it’s endlessly adaptable to suit your preferences. I designed it to offer sustained energy from the whole grains and nuts.
Cabbage Vegetable Soup Original
Who knew that cabbage soup could be this good?! This bright and light recipe is a lovely spin on classic vegetable soup. If you’re trying to get back to healthy eating after the holidays, this warming cabbage soup is an inexpensive wintertime alternative to leafy green salads. Cabbage soup may have originated in Eastern Europe, but this recipe offers simple Italian flavors. It starts with carrots, onion and celery cooked in a generous drizzle of olive oil.
Now introducing… the wintery side dish or vegetarian main dish that you didn’t know you needed! You’ll love how it comes together with one pot on the stove and one pan in the oven. This festive green and red dish features roasted Brussels sprouts cooked to crisp-tender perfection with fresh cranberries, which become so lovely as they bake on the same pan alongside the sprouts. Add chopped pecans to the pan toward the end of baking to toast them.
Sofritas (Chipotle-Style)
This recipe was inspired by Chipotle’s tofu option called “sofritas.” Have you tried it? I often order it on my burrito bowl for some additional plant-based protein. It’s hearty, saucy and spicy, and makes the extra three-dollar charge for guacamole worthwhile. I based this recipe directly on Chipotle’s ingredient list. Then, I played around with the amounts and the method until it tasted just right. Honestly, I like this version even better! It tastes fresh, flavorful and nicely spiced.
Lentil Burgers
Lentil lovers, these lentil burgers are for you! These hearty meatless burgers are made with familiar and wholesome ingredients, unlike many store-bought options these days. My Favorite Veggie Burgers are still my go-to, but these lentil burgers come in second. These burgers are flavored with grated carrot, fresh cilantro or parsley, onion and garlic, and spices, including chili powder, cumin, salt and pepper.
Homemade Ketchup
Ketchup fans will love this recipe. It offers a thick, dippable texture, with classic yet grown-up ketchup flavor. It tastes nicely balanced, but leans a little more savory than sweet. The recipe calls for a whole container of tomato paste—choose the best you can find for deep, rich tomato flavor.
Apple Pancakes Original
When you buy through our links, we may earn a commission. Learn more Let’s celebrate the cooler weather with a stack of warm apple pancakes! These apple-flavored pancakes are the perfect autumnal breakfast treat. They’re a simple weekend breakfast project that keeps well for quick weekday mornings (they freeze and thaw well, too). This apple pancake recipe is made from scratch with freshly grated apple, which is enhanced by a touch of ground cinnamon.
Chocolate Chip Muffins Original
When you buy through our links, we may earn a commission. Learn more These chocolate chip muffins are divine—they’re fluffy, tender and studded throughout with chocolate chips. They’re our three-year-old daughter’s current favorite muffin in my muffin repertoire, and I understand why! She loves dark chocolate as much as I do, so I can vouch that these muffins delight kids and adults alike.
Pesto Pizza Original
How about pizza tonight? It’s hard to beat classic pesto pizza. This simple vegetarian pizza recipe is a guaranteed crowd pleaser. It offers an irresistible combination of fresh, bright flavors from the basil pesto and tomatoes, plenty of cheesy mozzarella, and a bubbling crust with a satisfying chew. This easy pesto pizza recipe comes together quickly with the help of your food processor.
Perfect Scrambled Eggs Original
I’ve cooked scrambled eggs about a million times in my life, and I’m pretty particular about them. I like fluffy scrambled eggs topped with cheese. They must not be mushy, undercooked, or overcooked (the worst—and that smell!). I’m sharing my perfected technique with you today. This recipe is designed for a stainless steel or cast iron skillet. If you’ve ever wondered how to cook scrambled eggs without a nonstick skillet, this post is for you.
Homemade Pita Chips Original
Have you tried making your own pita chips? The key is to separate your pita bread into layers so the chips turn out delightfully crisp and golden. They’re truly irresistible and last in the pantry for up to two weeks, so they’re ready to grab for a quick snack. Freshly-baked pita chips taste so much better than store-bought chips, even when you’re using store-bought pita bread like I did.
Peach Cobbler with Almond Topping Original
Meet the peach cobbler of my dreams! This irresistible dessert features warm, bubbling peaches with a golden cobbler topping that’s craggy at the edges and tender inside. Make this recipe from mid-to-late summer when fresh peaches are at their peak. This simple peach cobbler recipe is sweet but not too sweet, so the glorious peach flavor shines above all else.
Pesto Pasta Original
It’s hard to beat a bowl of pesto pasta. Today, I’m sharing a classic basil pesto pasta recipe from start to finish! You’ll learn how to make basil pesto from scratch and toss it with freshly cooked noodles in perfect proportions. I like my pesto pasta saucy, so I used a generous amount of pesto here, which is more affordable when you’re making your own pesto. It takes ten minutes or less to make pesto in a food processor, but you could certainly use store-bought pesto if you have a favorite brand.
Pistachio Milk Original
I’m sure you’ve tried almond milk, but have you tasted pistachio milk?! It’s cold, smooth, creamy and tastes like pistachios. It’s dreamy and delicious, as well as dairy-free and nutritious. I first encountered pistachio milk in the alternative milk section at Whole Foods, offered by a brand called Three Trees. As a pistachio lover, I had to try it immediately. I loved it, naturally, so I had to try making it myself.
Burrata with Tomatoes & Basil
Let’s hear it for burrata cheese! I always order burrata when I find it on restaurant menus, and we’ve had some stellar combinations this summer. I can’t resist burrata’s contrasting textures—it’s like fresh mozzarella on the outside, but lusciously soft and creamy on the inside. For this recipe, I designed a quintessential summertime burrata salad with fresh tomatoes. Serve it with crostini or a loaf of crusty bread to make it an appetizer.
32 Fresh Summer Salads
Summertime produce is in full swing, and I couldn’t be happier about it! Salads are my specialty, so I’ve created a collection of my best summer salad recipes. They’re perfect for parties, barbecues and summer evenings at home. These recipes have hundreds of five-star reviews, so they’re sure to be a hit on your table.
Poppy Seed Dressing Original
Let’s hear it for poppy seed dressing! This lightly creamy, lemony dressing is irresistible with tender lettuces and fresh fruit. The poppy seeds add a light crunch and nutty flavor that make your salads memorable. This recipe is easy to mix together with quality ingredients, and beats store-bought dressing by a mile. It features poppy seeds, of course, as well as fresh lemon juice and zest. It’s sweetened with honey, which offers more flavor than plain sugar.
Watermelon Popsicles Original
Who’s to say when a popsicle is a popsicle? Let me be clear: these watermelon popsicles are frozen slices of watermelon on sticks. (Or not on sticks—you can freeze slices or wedges and use the rind for a good grip.) I tried making watermelon popsicles in molds, and I genuinely prefer the texture and flavor of these straightforward pops. These watermelon popsicles are refreshing, simple, fruity summertime treats.
Quinoa Tabbouleh Original
Tabbouleh fans, have you tried making it with quinoa? This recipe is a fun variation on classic tabbouleh made with quinoa instead of bulgur wheat. It turns our favorite Lebanese salad into a gluten-free dish. The quinoa is fluffy and has a somewhat nutty taste, but overall, the flavor profile is quite similar. Since I already changed one primary ingredient, I took the liberty of adding some chickpeas and feta cheese, more ingredients that you would not expect to find in tabbouleh.
Avocado Pesto Original
Avocado pesto is a deliciously creamy and fun variation on classic basil pesto. This avocado pesto recipe features ripe avocado in addition to the usual basil, Parmesan, olive oil and pine nuts (in these photos, I used pepitas instead, which are lovely as well). A squeeze of fresh lemon brightens and complements the flavors, and helps keep the avocado green. You can use avocado pesto on pasta, of course. It makes a stellar veggie dip and sandwich spread, too.
21 Summer Desserts Original
What’s better than a cold or fruity sweet treat on a hot summer day? Not much! Here’s a collection of my most popular summer dessert recipes, including classics like French clafoutis and fun surprise treats like pineapple mint popsicles. These desserts are all fresh and simple to make, and sure to please a crowd or delight your dinner table. Most feature fresh berries and peaches, including fruity crisps, simple cakes, and frozen yogurt.
Gluten-Free Pancakes Original
Pancake lovers, this recipe is for you, whether you’re gluten-free or not! This easy recipe calls for one wholesome flour—oat flour—and basic ingredients like Greek yogurt, maple syrup, butter and eggs. (If you don’t have oat flour on hand, you can easily make your own by blending old-fashioned or quick-cooking oats in a food processor or blender.) These golden pancakes are fluffy and delicious, with a subtle oatmeal flavor.
Find Your New Go-To Easy Appetizer Original
Your guests are about to be impressed! This blog offers over 100 appetizer recipes, but the recipes that made this list are the easiest appetizer ideas in my collection. These crowd-pleasing, no-fuss recipes are made with basic ingredients that come together quickly and taste amazing. Start at the top to find the easiest of them all. Toward the bottom of the list, you’ll find a few recipes that require a smidge more effort but are completely worth your while.
Gimlet Cocktail Original
The gimlet is a classic cocktail that deserves more attention! Made with gin, lime juice and sweetened with simple syrup, it comes from the sour family of cocktails (my specialty). Save the elaborate cocktails with unrecognizable ingredients for ordering at fancy bars—a simple, citrusy, not-too-sweet cocktail at home is one of life’s simple pleasures. The gimlet is light and bright, like a more casual version of a martini that you can sip slowly on a porch.
