1. Introduction The number of people following a plant-based diet is constantly growing worldwide [1,2]. Plant-based diets encompass different types, depending on the products consumed, and the most common are vegetarian diets (i.e., vegan, VN, and lacto-ovo, LOV) [3]. All vegetarian diets avoid the intake of meat, poultry, fish and seafood, as well as slaughterhouse byproducts (gelatine, animal fat, lard or rennet) [4]. At the same time, the LOV diet retains eggs and dairy products [5].

You are already at the latest version Levels of lipopolysaccharide (LPS), arachidonic acid (AA), and advanced glycation end products (AGEs) are higher in the brain of subjects affected by cognitive impairment and Alzheimer’s disease(AD), compared to a healthy brain. Inflammatory cytokines, triggered by LPS and AGEs in food, can enter the brain via active transport and induce microglial activation, inflammation, and oxidative damage.
