1 Introduction Dairy dominates the milk market, responsible for 83% of milk sales in 2024 (Mills 2024). However, dairy production has raised concerns about animal welfare, human health, and environmental sustainability (Clay et al. 2020). These concerns, among others including perceived lactose intolerance and dairy allergies, have contributed to the rise of non-dairy milks, despite them being more expensive than dairy milk (Ramsing et al., 2023; Moss et al. 2022).
