It's different from the OG green goddess, but still full of nutrients. It's so vibrant, green and packed with flavor. I blanched the spinach to keep the color bright and found that it worked really well with the leftover chicken we had in the fridge.

I almost always start by searing chicken in a hot pot before adding the mirepoix. When you return the chicken to the broth later on, it creates the most flavorful, juicy meat. It's so delicious that, whenever I make soup, I save some of the shredded chicken to make this, the most incredible chicken salad you'll ever have.
