1 INTRODUCTION Glycation is a nonenzymatic reaction in which free amino groups in proteins react with free carbonyl groups of reducing sugars to form a Schiff's base. This is then converted into a more stable product called the Amadori product. Subsequently, advanced glycation end products (AGEs) are generated through a series of oxidation, dehydration, condensation, cross-linking, and cyclization (González et al., 2020).
