Rinse it with cold water and towel it dry. Then, rub it all over with yellow mustard and sprinkle liberally with your favorite rub. Â Here's mine . Set your smoker up for 230. And make sure your water reservoir is full. Smoke the pork on full smoke for about 2 hours until the internal temperature reaches 145.

Their Barn Doors are Open: Meet the Ebert's
The Ebert family of Algoma have never been shy about opening up their farm to visitors and had a huge crowd when they hosted Kewaunee Counties breakfast on the farm. But that crowd pales in comparison to the nearly 45 ,000 people expected to visit their dairy operation for Farm Technology Days July 11th through the 15th. The Ebert's are a very large, technology driven enterprise, where family still comes first.

Stuffed Pork Chops
Stuffed Pork Chops are easy and delicious. It's as easy as Season, Stuff, Smoke! Start with some nice thick cut pork chops. You can use either bone-in or boneless. I picked mine up at the Oneida Market , where the meat is locally sourced. These were nice 1" thick chops, so I butterflied them myself and prepped them for stuffing. I seasoned both the inside and outside of the meat. First, with a little yellow mustard, and then with a generous sprinkling of my go-to rub .

Optimistic Dairy Farm Families
Considering where the price of milk has been since the end of 2014, and then looking at some of the curveballs mom nature has thrown at them while trying to plant their spring crops and harvest alfalfa, You'd probably forgive a dairyfarmer for being a little down. However, that's just not in the DNA of most of our dairy producers.

Making up for Those Lost Pounds
As you're well aware, soon producers will no longer be able to use BST to increase their cows productivity . Dairy Concerns Multi-layered
Even though displaced dairy producers in Wisconsin and Minnesota found a home for their milk (although for some it may be short term) The problems caused by Canada's new dairy focus is not going to go a way. Plus, continued excess milk out of Michigan moving into the state and the level of production continuing to rise in Wisconsin, means the problem is far from being resolved. Supply and demand is a key factor in this dilemma and even though demand continues to rise, it is not outpacing supply.

Playlist: What's Prince Royce listening to?
Prince Royce is a Latin superstar making a move on the English-language market with his new album Double Vision, out this Friday. He's performing new singles Stuck on a Feeling and Back It Up on tour with Ariana Grande, and he has put together a mix of recent favorites for USA TODAY. I'm not the type to listen to a lot of "girl songs," but this beat rocks and Kendrick did a good job. It's like a hip-hop song, but I really like the way the beat drops.
