matcha panna cotta recipe by raymond tan with audrey payne
I was testing matcha recipes for Nimbo, the dessert shop I have with my cousin Chian, who also runs a matcha shop called Matcha Mate with her wife Belle, when I came up with this recipe. It’s now a regular seasonal item that we serve in spring and summer. The only really hard part about panna cotta is the recipe testing, when it’s all about getting the ratios right for the perfect texture. Once you’ve got that down, it’s really straightforward to make.

Graphic novel art from Made in Manila. This scene is from Made In Manila, a graphic novel that I’m currently working on. For a project like this I start by writing a research checklist and grounding abstract ideas with sketches. Digital art software like Photoshop and Blender help me to paint the scene broadly with an understanding of space, form and light. I then finish it off with stylised line work that expresses my style and influences.
