Afraid of Confession? Time to Come Home
By Robyn Lee “Why are people so afraid of going to confession?” I could tell that this question resonated with my confirmation class because there were so many responses. The students said because it was embarrassing, they were afraid the priest would judge them, the priest seemed unapproachable, or they thought they would get yelled at. These fears are real concerns and they are the reason many stay away from the Church for years.
How the housing sector can improve gender diversity
The UK property sector has historically struggled with gender diversity. With 30% of the sector's workforce and only 15% of senior management positions held by women, inequality clearly persists. While there has been improvement in years gone by, more can and needs to be done.
TMI about my vaginal breech birth in Norway
TMI about my vaginal breech birth in Norway So this is how we continue the human race. All right. By Robyn Lee Oct 21, 2022 Comments I hope one day Tilda asks me what I was doing when my water broke. Think of the valuable insight she’ll gain into the woman who gave her life—her first role model and source of inspiration: “I was taking a Buzzfeed quiz on my phone while lying in bed. I wasn’t tired, but, eh, I was too lazy to roll out of there. It’s possible I had to pee.

First Look at In-N-Out Clone CaliBurger in Shanghai
[Photographs: Josh Atkins] CaliBurger is the upcoming burger chain aiming to bring a taste of California-style fast food burgers to Shanghai and beyond—which would be fine if they weren't also trademarking In-N-Out's burger names outside of the US. As the legal battle continues, In-N-Out responded with a one-day pop-up in Shanghai. AHT reader Josh Atkins, who first told us about CaliBurger and the In-N-Out event, recently attended a tasting at CaliBurger.
The Girl Who Ate Everything (2.0)
My personal blog about whatever About Archives I made a tiny human! Hope I don't screw this up! Hahahaha! By Robyn Lee May 9, 2020 Comments My first selfie with Tilda. Nailed it. Say hello to Tilda! Since the end of January, she’s been blessing Kåre and me with yogurty milk blurps, crusty skin flakes, sneezes that hit us straight in the mucus membranes, and other bodily functions so potent that they fill me with a mix of pride and alarm.
Previously undetected super-spreading of Mycobacterium tuberculosis revealed by deep sequencing
Abstract Tuberculosis disproportionately affects the Canadian Inuit. To address this, it is imperative we understand transmission dynamics in this population. We investigate whether 'deep' sequencing can provide additional resolution compared to standard sequencing, using a well-characterized outbreak from the Arctic (2011-2012, 50 cases). Samples were sequenced to ~500-1000x and reads were aligned to a novel local reference genome generated with PacBio SMRT sequencing.

10 Crazy Asian Pizzas
Nothing gets the stomach juices flowing quite as well as a ring of shrimp with tails dangling in the air and heads swaddled in tubes of cheese-stuffed dough. My idea of a pizza is rather basic: a flat round of dough covered in tomato sauce, dotted with mozzarella, and topped with a few basil leaves. But in the world of East Asian pizza chain pies, that would be some major weak-sauce pizza. Where are the shrimp, potato, and mayonnaise toppings? Where's the hot-dog-and-cheese-stuffed crust?
The Three Immutable Rules of Chicken Tenders
A true connoisseur of the chicken tender knows that there are three immutable rules. The first is the rule of physical integrity. A tender has a proper shape: flattish, oblong, and gradually tapering from a wide front to a narrow end. Unlike nuggets, which are largely made from processed, re-formed scraps, the chicken tender takes its name from an actual piece of the chicken: the pectoralis minor, a muscle located under the breast, against the sternum. The tenderloin.
Celebrate the Mid-Autumn Festival with Butt-Shaped Mooncakes
[Image: G.O.D.] Mooncakes are the traditional pastries given out during the Mid-Autumn Festival, the Chinese holiday that this year lands on October 3, aka the 15th day of the eighth month of the lunar calendar. Red Cook has a roundup of non-traditional mooncakes made for this popular holiday, such as coffee-flavored mooncakes from Starbucks, ice cream mooncakes from Häagen-Dazs, and...butt-shaped mooncakes?
Rejoice! New Catch Holland Herring Season Is Upon Us
[Photographs: Vicky Wasik] Mild, clean, and bright in flavor, with a buttery soft texture, new catch Holland herring are so beloved by the Dutch that there's an annual celebration held in the Hague, known as "Flag Day," to mark the beginning of the season in June. In the past, these special herring were hard to find in the US—this 1981 article from The New York Times notes they were only available at Grand Central Oyster Bar in New York City.
Squishing S'mOreos Forever
[Photographs and animation: Robyn Lee] When you saw the S'mOreos in our roundup of 14 Things To Make with Oreos, did you think, "Man, if only I could watch an animated gif of a S'mOreos being squished down over and over again for eternity..."? Well, so did we. So did we. But not content with just seeing a faceless S'mOreos being pressed into gooey cookie sandwich awesomeness, I also put a face on it. You know, to dig deeper into the S'mOreos' consciousness. To make you feel what it feels.

The Best Egg Custard Tarts in Manhattan's Chinatown

A Chinatown egg custard tart taste test—who wouldn't want to do that? There are only, what, 50 or so bakeries in Chinatown? ...Wait, maybe this is a bad idea. But Serious Eats intern Shell and I tasted anyway, because egg custard tarts are one of our favorite desserts.
12-Year Old McDonald's Hamburger, Still Looking Good
Photograph taken by Karen Hanrahan UPDATE: We experimented with other burgers to break the myth of the 12-Year Old McDonald's Burger That Just Won't Rot. The McDonald's hamburger on the right is from 2008; the one on the left is from 1996. And they both look fairly edible. Wellness educator and nutrition consultant Karen Hanrahan has kept a McDonald's hamburger since 1996 to illustrate its nonexistent ability to decay.
Paula Deen on Her Bacon, Doughnut, and Fried Egg Burger
On a recent episode of NPR's Wait Wait...Don't Tell Me, butter goddess Paula Deen gives some backstory to her Lady's Brunch Burger that features doughnuts-for-buns, bacon, and a fried egg. Why doughnuts? Those donuts were there, and the hamburger was there, so I said, "What the heck are we using buns for when we've got these luscious donuts?" Bless you, Paula.
"A Mighty Bitey Creature" by Robyn Lee
Frog is minding his own business when suddenly something takes a bite out of his little green bottom. On his way to tell King Lion what has happened and get help, he runs into a series of friends who also get bitten. Finally, when they all find King Lion, the Mighty Bitey Creature bites him as well. After looking around, they find a tiny animal baby that is just hungry for dinner.
"Possum and the Summer Storm" by Robyn Lee
Possum’s family watches as their home washes away in a rainstorm, leaving them with nowhere to live. A friendly neighbor notices their situation and volunteers to help rebuild the Possum family home, prompting a community effort. Each forest animal helps build the kind of home they are used to, until eventually the Possum home is roomy enough for everyone to take shelter when the next storm hits.
"LMNO Peas" by Robyn Lee

The Peas introduce themselves at every letter, giving occupations and actions that begin with each progressive letter of the alphabet. They are acrobats and zoologists and everything in between. Each illustration showcases the letter as well as little green peas doing the jobs they are listing. At the end of the book, the peas finish their introduction and ask who the reader is in return.

Who is the Real St. Francis?
If you ask people what they know about St. Francis, many people would picture a simple friar holding a little bird in his hands, but Fr. Daren Zehnle said that a better symbol for Franciscan spirituality is St. Francis holding a cross. St. Francis was the preacher of Christ’s cross. He chose the design of his habit because it was shaped like a cross. He would pray with his arms outstretched and his soul would melt at seeing Jesus on the cross.
Fried Chicken, Gelato, Falafels and Burgers (and Indigestion?)
About four weeks ago (yes, I know I am very, very behind here) I met up with Jeanne, on vacation from California, and her friend Stephanie to eat at Bon Chon, one of many Korean fried chicken joints that have been popping up lately. Or later than lately. I didn't even know fried chicken was a popular dish in Korea until I read the NYT article. Even after reading the article I was only slightly interested in checking out the craze; even though I like fried chicken, I'm not crazy about it.
Within-host Mycobacterium tuberculosis diversity and its utility for inferences of transmission
Whole genome sequencing in conjunction with traditional epidemiology has been used to reconstruct transmission networks of Mycobacterium tuberculosis during outbreaks. Given its low mutation rate, genetic diversity within M. tuberculosis outbreaks can be extremely limited – making it difficult to determine precisely who transmitted to whom. In addition to consensus SNPs (cSNPs), examining heterogeneous alleles (hSNPs) has been proposed to improve resolution.

Dear AHT: Differences in Regional Mustard Use on McDonald's Hamburgers
I have a burger question that I have been trying to research on the internet to no avail. It's about McDonalds regionalism. I grew up in Miami and now live in NYC. In Miami, when you order a hamburger at McDonald's, it comes topped with ketchup, mustard, pickle, and onion. Here in NYC, it only comes with ketchup, onions and pickles. A brief survey revealed that in Long Island and Wisconsin, there is no mustard on their burgers, while in Michigan, theirs have mustard.

Behold French Fry-Stuffed Fat Sandwiches From RU Hungry in New Brunswick, NJ
Lee Greenwood's patriotic crooning doesn't often pop into my head, but when it does, it's probably not for any reason Greenwood had in mind. Unless he wrote those words to behold the majesty of a sub roll stuffed with three different kinds of fried foods. In that case, I totally nailed it. That fried food-stuffed roll is just one many members of the fat sandwich family.
Shake Shack Coming to Las Vegas Next Year
Today Shake Shack announced they'll be opening in Las Vegas [PDF] at the end of 2014 near the Monte Carlo and New York-New York hotels as part of a new park environment that "will feature dining pavilions and performance spaces complemented by areas for quiet relaxation." This is Shake Shack's first location in the Western US. More importantly, as @Whatsinmymouth pointed out, this means we can do a real side-by-side In-N-Out vs. Five Guys vs. Shake Shack taste test. "Bear Snores On" by Robyn Lee

How to make tian dou hua (甜豆花), sweet tofu custard with ginger syrup
[Did I write too many words? Yuuup. Click here to jump straight to the recipe!] For most of my adult life, I ate out almost every day and reserved cooking for special occasions. It was a perfect marriage of two of my favorite activities: 1) eating and 2) not cooking. Then I killed that perfect marriage by getting married. After moving from the US to Norway to join my husband Kåre in his home city of Bergen, my eating out and cooking habits flipped.

Soft sounds from another planet
Japanese Breakfast performed for the fourth time at Bar le Ritz on Sunday, October 8. As usual, their show cultivated an atmosphere of familiarity and comfort. While their debut record, Psychopomp, was steeped in childhood nostalgia, their latest release from the summer, summer, Soft Sounds from Another Planet, represents an emotional and painful coming-of-age. Lead singer Michelle Zauner reflects on her personal grief over her mother’s death on both albums.
RIP Cup & Saucer (but if you're in NYC you still have a few days to get there before it closes)
"Indigestion or Heartbreak?" isn't a guessing game that I often play. My heart's quite intact and, surprisingly after all these years of forgetting that feeling full is a signal to stop eating, so is my digestive system.

Snapshots from Hong Kong: Gold Coin Chicken, aka Cholesterol Sandwich, from Manor Restaurant
From February 9 to 17, I visited Hong Kong on a trip sponsored by the Hong Kong Tourism Board. Here's a look at something I ate during my trip. Make sure to check out my other Snapshots from Hong Kong. Update (12/3/13): This restaurant is now closed. The name gold coin chicken (gum chin gai in Cantonese) somewhat describes this sandwich's shape, but it tells little else about its components. For one thing, there's no straight-up chicken meat in it—but it does contain a slice of chicken liver.

In Videos: Barack Obama Orders a Burger on Air Force One
From National Geographic's upcoming TV series, On Board Air Force One, comes this clip of President Barack Obama (though president-elect at the time) ordering a burger before taking his first flight on the presidential plane. His order? Medium-well burger with cheddar cheese, Dijon mustard, lettuce, and tomato—with a side of fries. I wonder how that medium-well burger came out. On Board Air Force One premiers this Sunday, January 25, at 8 p.m. ET. Check your local listings for channels.
