Chili-Rubbed Grilled Jumbo Prawns • 2 tbsp smoked paprika • 1 tbsp chili flakes • 2 tsp dried thyme • 2 tsp dried oregano • 1 tsp mustard powder • 1 tsp ground cumin • 1 tsp garlic powder • 1 tbsp brown sugar • 2 tsp kosher salt • 1 tsp ground black pepper 1. Combine all ingredients in a bowl and mix well. 2. Pat the prawns dry and toss with 1 tbsp neutral oil. 3. Coat generously with the chili rub. 4. Grill over medium-high heat for 2–3 minutes per side, or until lightly charred and cooked through.
