With two young kids, we get through a lot of bananas in our household. Perhaps surprisingly, though, most of them are frozen: our daughters eat them straight from the freezer most evenings, with frozen berries and yoghurt, for pudding. We normally order a stack of bananas every Saturday, and before the end of the week they inevitably start to turn brown.

My new favourite preparation for sauces, marinades and dressings is in a near-empty jar, tub or bottle, so I can upcycle all the remains. Rather than washing it and putting it in the recycling, I instead add a few store-cupboard ingredients to create a dressing or sauce, often re-exploring classics such as a retro Marie Rose sauce or my yoghurt-pot chicken.

He regularly pops into my mind when I'm cooking, whispering in my ear: "Add some spinach to that risotto," say, or "Moringa powder will make your porridge much more nutritious." So I'm sure today's green gazpacho would make him proud. It's a great way to clear out your crisper drawer and pack a meal with all sorts of greens.
