Chitosan is the most abundant biopolymer with a linear aminopolysaccharide composed of glucosamine and N-acetylglucosamine residues that are held together by glycosidic bonds. It is insoluble in water and soluble in acids such as hydrochloric acid and acetic acid, and its solubility is influenced by the degree of deacetylation. Chitosan is typically extracted from shrimp and crab shells containing abundant calcium carbonate and chitin and can also be obtained from bacteria or fungi [7, 117, 133].
