Honey-Glazed Baby Back Ribs with Whiskey Marinade
Cook Time: 2 hrs 20 mins Total Time: 6 hrs 40 mins These juicy ribs are packed with flavor thanks to ingredients like ginger, white pepper, fish sauce, cilantro, and lime. Roasting the ribs low and slow, then finishing with a light char on the grill, keeps the meat tender and prevents the glaze from burning without compromising on smoky flavor. The honey-soy glaze that gives the ribs their deliciously sticky crust also doubles as a dipping sauce.
Local Bites: the best places to eat and drink in Chiang Mai
I first arrived in Chiang Mai in May of 1992. I came to visit a high school buddy who had married a local – a professor at Chiang Mai University. They introduced me to the local cuisine and to their friends and family members who took me under their collective wing. I was hooked. I returned every year until I opened the first Pok Pok restaurant in Portland, Oregon, in 2005.
Make it Loud: Q&A with Dylan Eitharong
In a semi-hidden location in the north of Bangkok, an American-Thai chef has, somewhat improbably, turned the small shophouse where he lives into Haawm, one of the city’s most well-regarded restaurants. Dylan Eitharong, 31, might seem an unlikely new culinary hero in the Thai capital. He’s a Floridian, born in the US to a Thai father and an American mother, and didn’t even grow up speaking Thai.

Toasted Thai Chile Powder
Andy Ricker 40 minutes ago Throw open a window or turn on the exhaust before toasting the chiles for this fiery Thai spice.Matt Taylor-Gross Phrik Pon Khua (toasted chile powder) is a common spice in Thailand, where it is often a part of the seasonings served at the table with pad thai. It has a tame heat and a roasted, dark-fruit flavor. Be sure to toast your chiles in a very well-ventilated area or, even better, outdoors on a small charcoal grill.
Thai Tamarind Water
Andy Ricker 40 minutes ago Look for minimally-processed Thai tamarind pulp; when fresh, it should be slightly soft when squeezed.Eva Kolenko The sticky pulp of the tamarind fruit is popular in sweet and savory dishes, and beverages in tropical regions. Equipment Thai Tamarind Water Use this smooth tamarind liquid to add tart sweetness to sauces, chutneys, and cocktails.
Palm Sugar Simple Syrup
Andy Ricker 40 minutes ago Palm sugar (also known as coconut sugar) is sold in hard cakes or in its softer form in wax-sealed plastic tubs. Both are fine for this recipe, though the softer version is easier to measure. If using the cakes, pulverize the sugar to a fine powder using a heavy mortar and pestle.Eva Kolenko Dissolving palm sugar makes it easier to incorporate into pad thai sauce. Look for the soft and scoopable version, sold in small tubs at Asian markets.
Andy Ricker's Pad Thai with Pork and Shrimp Recipe
Andy Ricker 40 minutes ago Semi-dried, flat rice noodles, which are available online and in many Asian markets, are worth seeking out, as they hold their shape and texture better than the fully dried version.Eva Kolenko Maximizing the ingredients’ contact with the wok is essential, so chef Andy Ricker advises against doubling this recipe, which is adapted from his book with writer JJ Goode, Pok Pok Noodles.
Pet Pha Lo (Stewed Duck) with Chile Dipping Sauce - Moveable Feast Recipe - FineCooking
Scott Phillips Yield: Yields about 1 cup of sauce Servings: 4 Thai soy sauces have a flavor that’s distinct from Chinese or Japanese sauces, and are an important element in this slow-cooked duck dish. Chef Ricker uses both thin or “white” soy sauce, which is light and transparent, and the thicker, stronger black variety. Ingredients For the pet pha lo 1 oz. dried shiitake mushrooms 1 cup Thai thin white soy sauce Scant 1/3 cup Thai black soy sauce 2 oz.
Phat Si Ew (Stir-Fried Rice Noodles with Pork, Chinese Broccoli & Soy Sauce) - Moveable Feast Recipe - FineCooking
Austin Bush © 2013 Servings: 1 as a one-plate meal A quick cook in a screaming-hot wok—what I now recognize to be the Chinese stir-fry technique—is the key to achieving the smoky, charred flavor common to the best versions of the dish. The recipe serves one; to make more, double or quadruple the ingredients, but cook each batch separately. This recipe is excerpted from Pok Pok. Read our review. Ingredients For the pork 1-1/2 tsp.
Spicy Lime Leaf Beer Nuts
© James Ransom This spiced nut mix gets tossed with kaffir lime leaves, typically used in Thai curry sauces but here fried crisp. The dish is one of many kap klaem (drinking snacks) that Andy Ricker offers at Pok Pok's Whiskey Soda Lounge. "These nuts are served all over Thailand, usually with some kind of dried fish mixed in," he says. Slideshow: More Tasty Snacks How to Make It Step 1 In a very large skillet, heat the peanut oil. Thai Hot-and-Sour Shrimp Soup (Tom Yam Kung)

The perfect boiled egg, every time
Photo: bhofack2 / iStock / Thinkstock Khai Tom To me, the egg is kind of the perfect food. You don't have to do much to it; it's very versatile. You can make it into a lot of different shapes and textures. A perfectly boiled egg is good for breakfast, in a soup, on top of rice or as a snack. Always start with room temperature eggs. This is important. When we drop them into the boiling water and start the timer, we know that it's always going to come out with the same consistency.
Honey-Glazed Baby Back Ribs with Whiskey Marinade
© Cedric Angeles At Pok Pok, Andy Ricker roasts these meaty, tender ribs for two to three hours over a low fire for a fabulously smoky flavor. In this easy adaptation, the ribs are slow-cooked in the oven, then finished on the grill. Baby back ribs cut across the bone are the classic Thai choice, but whole ribs are just as delicious. Slideshow: More Barbecued Ribs How to Make It Step 1 Arrange the rib racks in a large glass or ceramic baking dish, overlapping them slightly.
Thai Pork Broth - Recipe - FineCooking
Scott Phillips Yield: Yields 15 cups Though Thai Hot-and-Sour Shrimp Soup tastes terrific when made with just water, the more flavorful and traditional way to make it is with pork broth. This recipe makes more broth than you’ll need for the soup, but it freezes beautifully. Use it to add flavor to stir-fries and steamed fish or vegetable dishes. Ingredients 5 lb. pork neck bones or spare ribs 1 head garlic, whole and unpeeled 1 oz.
Andy Ricker On Why He Eats Vietnamese Noodle Soup for Breakfast
When I eat breakfast, it's almost always a bowl of noodles. To me, they're a far lighter and healthier breakfast than, say, a stack of pancakes smothered in butter and syrup, topped off with a couple of sausage links. It's a habit I adopted during my wanderings in Southeast Asia: Though there are some foods people only eat in the morning (fresh hot soy milk or coffee with Chinese "donuts" or rice porridge, for example), there isn't really an analogue to bacon and eggs.
AZ's Top Cookbooks of 2013

No matter what type of cook you consider yourself to be, these are cookbooks that should be in your library. Andy Ricker’s a rock star and I adore his new cookbook.
Som Tam Phonlamai (Thai Fruit Salad) - Moveable Feast Recipe - FineCooking
Just one of many examples of som tam that has nothing to do with green papaya (I do like to add some for this rendition, but you could certainly leave it out) and almost everything to do with the method of preparation: made in a clay mortar, the salad requires the same gentle pounding that aims to bruise but not smash the main ingredients, allowing some of the sweet-tart dressing to pervade. Use any fruit you want, even if it’s just one or two kinds.

On both coasts, Andy Ricker is known for his mastery of Northern Thai food — though he’s swift to disagree. A Vermont native, Ricker became obsessed with Thailand and its food after his first visit over 30 years ago.
Eating Drunkard’s Stir-Fry With Anthony Bourdain
Way back in 2013, while I was in the throes of researching my book, Pok Pok The Drinking Food of Thailand, I approached Anthony Bourdain and asked if he’d consider meeting up in Thailand to share a drink or two at a spot that specialized in aahaan kap klaem. To my surprise, he proposed devoting an episode of his CNN show Parts Unknown to the drinking food of Thailand. I eagerly volunteered to be his guide. This, I figured, was the perfect opportunity for my first foray into phat khii mao.
Nonfiction Book Review: Pok Pok: The Drinking Food of Thailand by Andy Ricker, with J.J. Goode. Ten Speed, $35 (272p) ISBN 978-1-60774-773-4
Andy Ricker, with J.J. Goode. Ten Speed, $35 (272p) ISBN 978-1-60774-773-4 Ricker’s Pok Pok restaurant in Portland, Ore., was so popular that he opened the Whiskey Soda Lounge across the street to handle the overflow. In like manner, his 2013 Pok Pok cookbook was so well received that he has followed it with this nine-chapter collection of snacks inspired by the Whiskey Soda Lounge menu.
Ike's Vietnamese Fish Sauce Wings
© Wendell T. Webber Pok Pok • Portland, OR Chef-owner Andy Ricker, who takes annual trips to Southeast Asia, first tried fish sauce wings at a roadside stand in Saigon seven years ago. He scribbled down his guess at the ingredients on a paper napkin, which he carried with him until Pok Pok opened. More Chicken Wings Recipes How to Make It Step 1 In a bowl, whisk the fish sauce, sugar and crushed garlic. Add the wings and toss to coat. Refrigerate for 3 hours, tossing the wings occasionally.
Thai Ice Cream Sandwich (Khanom Pang Ai Tiim) - Lucky Peach
When some people see that we serve an ice cream sandwich on a hot dog bun, they think we’re being cheeky. Nope, this is more or less what you get in Thailand: a squishy, doughy white platform for ice cream (or “ai tiim,” as it’s pronounced there) drizzled with chocolate syrup and sweetened condensed milk, and dusted with crushed peanuts.
Andy Ricker On The Absurdity Of Authenticity
Andy Ricker is the guy behind a mini dynasty of restaurants and lounges that basically recreate the food of Thailand (both from the street and indoors) to their most-authentic, blazing extremes. Note: Ricker takes issue with the term "authentic" and Thailand's rep for spicy cooking. He'll get into that below. But take for example the Isan-styled laap — a duck breast minced with liver and dressed with lemongrass, lime, fried shallots and chilies procured from what we’re certain is Satan’s CSA.

Honey-Glazed Baby Back Ribs with Whiskey Marinade
Frequently asked questions Is it good to marinate baby back ribs? For tender, flavorful ribs, marinating is the way to go. Our baby back ribs marinade comes together quickly just using a whisk; it's made from soy sauce, whiskey, and honey that's seasoned with fresh ginger, white pepper, sesame oil, cinnamon, and nutmeg. Allow four hours for the meat to soak in the refrigerator, covered, and turn it over halfway through. Do you rinse marinade off ribs?

Add the minced garlic; cook over moderate heat until golden, 3 minutes. Drain on paper towels. In a large pot, heat 2 inches of oil to 350°. Pat the wings dry on paper towels; reserve the marinade. Put the cornstarch in a shallow bowl, add the wings and turn to coat.
