The boat leaves from Everglades City once a week, heading toward a line of floating oyster baskets at the edge of Everglades National Park. For the crew, the trip is routine. The work, until recently, was not. Fabio Galarce, a founding partner in Everglades Oysters, pointed to a floating device known as a “flipper,” a helix-shaped system that rotates oyster baskets as they are towed behind the boat. For Galarce and his co-founding partner, Joshua Wilkie, the device represents more than efficiency.
