I was chatting with someone from Germany who moved to Canada about a year ago to work here. She lamented the lack of high percentage butterfat milk available in the marketplace. She likes to skim off the cream and finds milk that’s closer to what comes out of the cow more wholesome. Higher-butterfat milk reminds her of what milk has been like for much of her life in Europe.
