A former farm-to-table restaurant owner, she writes frequently about small-scale agriculture, animal welfare and equity issues in the food system. Ultimately, it may be a moot point whether or not cattle are the best tool for the job. Of the surviving grasslands, 85 percent are privately owned, and much of that is already tied up in cattle production. Moreover, to have real impact, conservation efforts must match the scale of the grasslands themselves—and that means shifting the focus onto working lands.
