Smoked Beef Stew
What elevates ordinary beef stew to extraordinary? Add some glorious wood smoke! Here's a beef stew with smoked beef. Get your smoker up to temp, around 240°. Cube the beef into about 1 inch cubes. Place in a foil pan in a single layer, and pour in just enough beer for the bottom half of the meat to sit in it. Season the top layer with salt and pepper. Smoke on full smoke for 1 1/2 hours. In the meantime, add the other ingredients to a slow cooker with whatever beef stew seasonings you like to use.

BBQ Sauce with Cherries and Chocolate?
While looking for a BBQ sauce that went especially well with poultry, I came across a recipe and modified it a bit with the ingredients I had on hand. Start by melting 3 T butter in a non-reactive saucepan over medium heat. Add 1/2 onion finely chopped, 3 cloves minced garlic, and 2 cups pitted Bing cherries. (see figure. lower left) Cook until the onions are soft, but not caramelized, 3-5 minutes.

Burgers on the grill are easy and delicious. Here is a great topping for your burgers that will give them a unique Southwestern taste. In a small bowl, combine the mayo, mustard, cumin, lemon juice, salt and pepper. Mix well and set aside. Preheat the grill. Cover the pepper in olive oil and set it on the grill grates. Rotate it around as each side begins to blister. Then, place in a covered bowl and set aside to rest for 10-20 minutes.

Ribs On the Grill
In most of my recipes, I usually use my smoker. I wanted to try some ribs on the grill this weekend and they actually turned out Amazing! The process is similar, but a tad different. Try the recipe below for delicious, tender ribs in half the time. Prepare the ribs. There are many ways to do this, but here are the basics. Place the ribs on a baking sheet, meat side down. Using a butter knife, work under the membrane on one of the middle bones and then grab it with a dry paper towel to pull it off.
Chipotle Chocolate Beef Ribs
I made my weekly run to Oneida Market and they had some beautiful beef ribs on sale, so I decided to try some Mexican smoked ribs! Chipotle and Chocolate is always a winner! Add the ingredients into a food processor and pulse to form a thick paste, add a little olive oil if necessary. Prepare the ribs, by removing the membrane on the bone side of the ribs.
Rhubarb BBQ Sauce
This is a really good sweet barbecue sauce. While the onions and garlic give it a little kick, you can add some extra heat by adding more hot sauce, or using cayenne pepper sauce rather than the Serrano sauce I use. Add the rhubarb and water to a medium saucepan and bring to a boil. Reduce heat and simmer for 5-6 minutes or until tender. Let cool slightly. Add the rhubarb and water to a food processor and pulse until smooth. Set aside.

Spicy Smoked Shrimp
Looking for something fast and easy to make in the smoker? Then try this recipe. Start with a pound of peeled, deveined shrimp. Put the shrimp in a resealable bag, and squeeze in the juice of 2 limes. Add the rub (above) and coat the shrimp well. Return to the fridge until the smoker is ready. Get your smoker up to temp, about 225°. Make sure the water basin is full. Add the shrimp, and smoke on full smoke for 25-30 minutes.
