Classic Cocktails that you can Make with Cava

Here’s a confession that might get me banned from certain Parisian bars: most “Champagne cocktails” will be just fine with Cava instead of Champagne. The bubbly in your French 75 or Mimosa, or Kir Royale could just as easily come from Catalonia, and few would know the difference. Some might even prefer it, and your pocket will certainly be better off for it. Cava, after all, is made the same way as Champagne.

Once marketed as “Spanish Champagne,” Cava is a sparkling wine produced mainly in the Penedès region of Catalonia, and a handful of other Spanish appellations. Since 1872, producers here have been making sparkling wine the same way they do in Reims and Épernay: with a second fermentation in the bottle, aged on the lees, disgorged, and corked. The method is almost identical. The product, of course, is not.

We didn't have a high school newspaper but I did work for our little radio show. I wrote scripts and short cultural segments.

What advice can you offer to aspiring journalists?

Read as much as you can about whatever interests you. Start writing as soon as you can and stay open to the advice of editors and readers.
