SCHENECTADY — Chelsea Heilmann’s journey to becoming a two-establishment restaurateur was years in the making. At 15, she landed a job bussing tables for a business in the Stockade. Then she spent some time working at the popular ice cream stand Curry Freeze, as well as at some cafes and restaurants in Saratoga County. “[I] was just always kind of like, 'This is cool,' ” Heilmann said. But she didn’t venture into her own place after leaving those businesses.
