Nutrient starvation activates ECM remodeling gene enhancers associated with inflammatory bowel disease risk in fibroblasts
Abstract Nutrient deprivation induces a reversible cell cycle arrest state termed quiescence, which often accompanies transcriptional silencing and chromatin compaction. Paradoxically, nutrient deprivation is associated with activated fibroblast states in pathological microenvironments in which fibroblasts drive extracellular matrix (ECM) remodeling to alter tissue environments. The relationship between nutrient deprivation and fibroblast activation remains unclear.

Definition of Germ Layer Cell Lineage Alternative Splicing Programs Reveals a Critical Role for Quaking in Specifying Cardiac Cell Fate
Alternative splicing is critical for development; however, its role in the specification of the three embryonic germ layers is poorly understood. By performing RNA-Seq on human embryonic stem cells (hESCs) and derived definitive endoderm, cardiac mesoderm, and ectoderm cell lineages, we detect distinct alternative splicing programs associated with each lineage. The most prominent splicing program differences are observed between definitive endoderm and cardiac mesoderm.

Systematic identification of genotype-dependent enhancer variants in eosinophilic esophagitis
Summary Eosinophilic esophagitis (EoE) is a rare atopic disorder associated with esophageal dysfunction, including difficulty swallowing, food impaction, and inflammation, that develops in a small subset of people with food allergies. Genome-wide association studies (GWASs) have identified 9 independent EoE risk loci reaching genome-wide significance (p < 5 × 10−8) and 27 additional loci of suggestive significance (5 × 10−8 < p < 1 × 10−5).
The Effect of Ultrasound on the Rehydration Characteristics of Semi-Dried Salted Apostichopus japonicus
1. Introduction As a typical marine organism in the family of vertebrates and echinodermata [1,2], sea cucumbers are rich in mucopolysaccharides [3], amino acids [4], fatty acids [5], collagen [6], and saponins [7]. Sea cucumber has attracted considerable attention because of its nutritional value [8,9]. However, fresh sea cucumbers are prone to autolysis and spoilage in certain environments, because they contain a large number of proteins and autolytic enzymes [10].

Dynamic Changes in the Microbial Composition and Spoilage Characteristics of Refrigerated Large Yellow Croaker (Larimichthys crocea) during Storage
1. Introduction Large yellow croaker (Larimichthys crocea) is a significant commercially farmed marine fish species in China, highly favored by consumers due to its abundance of high-quality protein and polyunsaturated fatty acids [1]. However, due to its high moisture content, large yellow croaker is prone to decay and deterioration caused by protein degradation, lipid oxidation, and microbial activity after death. Among these factors, microbial growth and metabolism play a decisive role [2].

Low Fatization of High-Fat Surimi-Based Products: Optimization of the Application of Protein Matrix Fat Substitution Methods
1. Introduction The low fatization of high-fat foods is a significant trend that will impact the future developments of food products. High-fat and high-calorie diets are closely related to the health risks caused by obesity. For example, chronic diseases such as cardiovascular disease and cancer are positively related to the amount of fat consumed in the human body [1,2,3]. Therefore, the development of low-fat foods has become an important method to reduce human disease.

Realization in circuits of a Chern state with an arbitrary Chern number
Abstract The Chern insulator, as the most prominent topological state of matter, is characterized by the Chern number C, which in principle can take any integer values. So far, most realizations of the Chern insulator are limited to |C|=1, and achieving higher Chern numbers remains challenging. Here, we propose a general scheme to realize the Chern state with arbitrarily large Chern number in an electric circuit.
