Giving Recipe Creators Their Due

About 20 percent of recipes on NYT Cooking have been adapted for home cooks from another source, like the recipe for this stuffing from Marilyn Monroe. Butter Beans with Butter, Mint and Lime
Time 10 min prep, 20 min cooking, 30 min total A long with muscadine grapes, butter beans are among the farmer's market treasures of late summer in Charleston—reason to wake up with gusto to another day of stultifying heat and oxford-soaking humidity. We do all kinds of things with butter beans: we make a hummus-like spread for the cocktail hour, we simmer them with seasoning meats of all sorts, and we compose marinated salads aplenty.

Can Millennials Solve the Truck Driver Shortage?
Although the shortage could initially have the greatest impact on the long-haul segment, short-haul municipal and independent fleets will not be immune. Photo: Magellan GPS The times are a changing. Baby Boomer truck drivers are retiring in droves, with up to 25% of today’s drivers cashing in their routes over the next five years. The average age of a trucker is 49 years and more than half of the truck industry workforce is over the age of 45.
Do the Best Cooks Have Supernatural Powers?
“I never took kindly to the idea that you outgrow the magical, and the surreal, and the fairy tale, and I still don’t.”-Marlon James It seems natural in an era when bunkum and hoaxes are front of mind that American culture would turn to food for its science and certainty, making chefs our technicians and professors.
Vine Dining With Wild Chainey Briar – Garden & Gun
Harvest A beach-loving plant that has chefs going wild by Matt Lee and Ted Lee August/September 2014 photo: Brennan Wesley A hatful of chainey briar. Like grits or scrapple, the term chainey briar just doesn’t sound appetizing. It brings to mind something prickly—certainly not something you’d ever eat.
Classic Boiled Peanuts
Antonis Achilleos; Prop Styling: Kay E. Clarke; Food Styling: Torie Cox It’s easy to master this roadside staple at home—boiled peanuts take hardly any effort to make. All you need are peanuts, water, salt, and time. Just make sure you choose the right peanut. Raw peanuts have been air-dried to reduce their moisture content, making them shelf-stable and available year-round. Green peanuts are freshly dug from the field and should be used within a few days of their harvest.
Cooking on the Cadillac of Vintage Stoves
Two brothers who make a living messing around in the kitchen inevitably find themselves competing for real estate at a four-burner gas range. Believe us, we’re not stove snobs, we don’t require special “features” or impressive BTUs, and the 265 recipes in our first cookbook (that garnered two James Beard Awards and two IACP awards) were developed on a four-burner Magic Chef that our landlord installed. But still, the idea of working on a stove with some elbow room was a fantasy of ours.
Why Boiled Peanuts are the Simple Snack Southerners Love
From sandy shores to ballparks, boiled peanuts are the ultimate Southern treat. As strange as boiled peanuts may sound to anyone living outside the South, raw (unroasted) peanuts boiled in a seasoned brine have been enjoyed for centuries throughout Asia, South America, and Africa.
Juicy BLT Recipe
The success of a BLT hangs in its balance of salt, acid, lusciousness and crunch. This version is perfect, with a generous swipe of mayonnaise on each slice of toast, followed by a drizzle of olive oil, tomatoes marinated in red wine vinegar and salt, butter lettuce leaves and thick-cut bacon. Squash this closed and eat while the bacon is still warm.
Orange Creamsicle Ice Cream Cake Recipe
Refreshing and citrusy yet creamy and sweet, this stunning dessert is just like a Creamsicle, but in grown-up cake form. It’s also incredibly easy: Simply stack spoonfuls of vanilla ice cream and orange sherbet into a springform pan and smoosh them down as you go. As for the crust, use whole vanilla wafers; They're less work, and crunchier than if you used crumbs. There are many ways to riff on this cake.
The Best Milk We’ve Ever Tasted Is Sold at a South Carolina Truck Stop
The spot on the map where Interstate 26 crosses Interstate 95 in Bowman, South Carolina, seems arbitrary, pencil lines scratched in a Capitol Hill basement during the Eisenhower era. Yes.

Duck Decoys, Hot Mustard & Celebrity Chefs: Welcome to the Southeastern Wildlife Expo
In an exhibit hall at the Gaillard Center in Charleston—a ballroom sectioned into corridors by folding tables, cheered up by extravagant backdrops—I stood near the giraffe paintings, but I was eyeing the shotguns at Westley Richards. A beautiful wooden display box held a seductive blued steel barrel with high-polished walnut stock complete with intricate filigree. Even from across the room, I knew it was out of my league (and price range), but I wanted a closer look.

An Excerpt From the New Book ‘HotBox,’ by Matt Lee and Ted Lee
Long after the conversation dies and the valiant caterers have gone home, there’s a final act that truly signifies the party is over. A truck pulls up at the site in the middle of the night (or the next morning) to haul away the borrowed tables and chairs, dirty plates and linens, glasses and other hardware that helped transform an empty space into something resembling a restaurant. You’ve seen a truck like this, even if it escaped your notice.

The cookbooks that authors actually use
March 30, 2019 by Darcie We all know (and appreciate) that food writers create amazing cookbooks, but they also use them for inspiration much as we cookbook aficionados do. Which volumes will you find on their bookshelves? Matt and Ted Lee, authors of several books including The Lee Bros. Southern Cookbook, have an answer. They interviewed several authors and developed a list of 18 cookbooks that cookbook writers and chefs actually use.
The 18 Cookbooks That Cookbook Authors Actually Use
Not that long ago, the cookbook was in grave danger. Pundits were predicting that digital publishing would make ink-on-paper obsolete. After all, ebooks are easy to set, easier to revise, and effortlessly reproduced, warehoused, and shipped. They’re nonperishable—they won’t collect dust or get covered by pasta sauce! How could cooks and writers argue with that? But then the unexpected happened: In 2018, hardcover, printed, huggable cookbooks were one of the biggest sellers.
