The Quarter Creole Cuisine Creole Seafood File Gumbo Recipe
There’s a genuine joyfulness expressed through the cuisine of New Orleans, and the people who cook it have a gift for finding a ray of sunshine in the midst of any challenge, whether a devasting hurricane or public health crisis. Claremont’s The Quarter Creole Cuisine reflects the Big Easy’s unique approach to cooking and life. Chef-owner Norm Theard appreciates the complex brew of French, Spanish, and African influences that contribute to his menu of Creole and Cajun specialties.
Via Maestra 42 Risotto ai Funghi Porcini Recipe
I feel lucky to live within walking distance of this cozy neighborhood Italian restaurant. Tucked next to the post office at the end of a strip mall, it’s my go-to for any meal, a quick espresso, a scoop of dreamy gelato, or something insanely delicious from the deli case (I’m talking to you, torta della nonna). Named after the address where owner Renato Moiso grew up, Via Maestra 42 keeps it simple, personal, and authentic.
Golden Chopsticks Salt and Pepper Chicken Wings Recipe
Salt-and-pepper chicken wings are the most well-known specialty at Golden Chopsticks, a 25-year-old Chinese eatery in National City. I crave them at any occasion, but I associate the dish most with celebration. Customers file into the restaurant throughout the day, picking up trays piled high with crispy wings designed to feed a crowd, whether it be a birthday party or a potluck gathering. Owner Thomas Chen says the kitchen goes through thousands of wings on a busy holiday.
Pizzeria Mozza Potato, Egg, and Bacon Pizza Recipe
As I wrote this, one of our nation’s culinary leaders, Nancy Silverton, was sick with COVID-19 (she has since recovered). When L.A.’s restaurants had to close in March, she turned her seminal Pizzeria Mozza into a relief kitchen, providing free meals to suddenly unemployed restaurant workers from across the city—an effort made possible by a grant from Maker’s Mark bourbon.
Adya Grilled Cauliflower Steak with Cilantro Sauce Recipe
One of Orange County’s first food-hall stars, Adya is a soulful, refined reinterpretation of Indian street food. The Anaheim Packing House restaurant brought dishes like slider-sized pavs (miniature sandwiches loaded like sloppy joes with minced lamb or spiced vegetables), charred kebabs (maybe tandoori shrimp or marinated paneer cheese), and a half-dozen curries (including a rotating vegetable curry of the day) to a wider audience.
Otono Pan Con Tomate Recipe
Chef Teresa Montaño’s narrow, intimate restaurant has been a way for me to slip off to Barcelona, my all-time favorite city, while never leaving Los Angeles. As I peruse Otoño’s menu, tastes of Spain flit through my mind:
croquetas de jamón (ham croquettes), paella, and, simplest of all, pan con tomate (bread with tomato), the item Montaño says is the restaurant’s most popular tapa. In Barcelona, pan con tomate is ubiquitous and savored at all times of the day and night.
