Carrot and Lime Leaf Kebabs with Lemongrass and Caraway Seeds
Bring medium pot of lightly salted water to a boil. Parboil carrots for 10 minutes. While carrots are cooking, make marinade. In large bowl, combine oil, chili (if desired), caraway seeds, turmeric, salt, and pepper. Drain carrots and add to marinade. Allow to sit for 10 to 15 minutes, tossing them around occasionally. While carrots are marinating, preheat oven to 400 F. Wrap each carrot piece in a lime leaf, then skewer.
Dandelion Latte | alive
This drink gives you the same sensory satisfaction as your usual tall soy latte from Starbucks, but without the jolt: It’s caffeine free. Dandelion “coffee” anchors this healthy cup of comfort. Ingredients 2 Tbsp dandelion root grounds 4 cups water 1 cinnamon stick 1 cup unsweetened cashew milk, plus more to taste Sorghum syrup, agave, or maple syrup, to taste Directions Preheat oven to 325 F. Spread dandelion root grounds on baking tray and roast until rich and fragrant, about 15 to 20 minutes.
Avocado Superfood Pudding
1/4 cup fresh blueberries, plus extra for garnish 1 Tbsp true (Ceylon) cinnamon 1 ripe avocado, peeled and pitted 2 ripe bananas, peeled and sliced 4 Tbsp raw cacao powder 2 tsp pure vanilla extract 1 Tbsp ground flaxseed 1 Tbsp pure maple syrup or coconut sugar (optional) Pinch of sea salt, to taste (optional) Slivered or whole almonds, for garnish (optional)
Super Umami Risotto
In medium saucepan, bring broth or water to a boil. Remove from heat. Add dried mushrooms and stir. Set aside and steep for 30 minutes. Over large bowl, strain rehydrated mushrooms through fine-mesh sieve, reserving liquid. Dice mushrooms and set aside. Add enough water to reserved liquid to equal 4 cups total. Set aside. Heat large, heavy-bottomed saucepan or sauté pan over medium heat. Add oil to pan. Add shallots and leeks and sauté until transparent, about 2 minutes.
Beetroot and Coconut Dip Spiced with Toasted Caraway Seeds and Chili
Set dry frying pan over medium heat. Toast caraway seeds for a few minutes, until gently toasted and aromatic. Cool, then grind in mortar and pestle. Blitz all but one of the cooked beets in food processor. Add yogurt, chili flakes, lemon juice, and ground caraway and blend. You’re looking for a very slightly coarse mixture, not a smooth cream. Check for seasoning and add a pinch of crushed sea salt, if necessary.
